Choosing Chilli by Application: Hot Sauce, Chilli Oil & Snack Seasoning
The right chilli depends on what the finished product is scored on — heat, colour, aroma or all three. This guide maps the four common applications to the variety, SHU, form and mesh that suit each.
Hot sauce
Hot sauce is scored on heat and colour. Use high-heat varieties — Sanying, Zidantou or Jixin in the 20,000–50,000+ SHU band — usually as powder or flakes. Specify the variety and a precise SHU window; heat is non-linear, so "hot" is not a specification. See SHU explained.
Chilli oil and infused oil
Chilli oil is judged on fragrance as much as heat. The classic base is aromatic Erjingtiao (15,000–30,000 SHU), often blended with a heat variety such as Sanying or Jixin. Use flakes or segments for even infusion and to keep the aromatic surface intact — fine powder clouds the oil and fades faster.
Snack seasoning
Snack coating wants even, instant heat and colour dispersion across a large surface. Use Seven-Star (or a Sanying/Zidantou blend) at 60–80 mesh powder, in a controlled SHU window. Powder disperses fastest, which is exactly what a dry snack seasoning needs.
Seasoning blends and spice mixes

Position: In my view, application selection is really three questions — what is the product scored on, what SHU window delivers it, and which variety holds that window consistently — and the answer is a blend, not a single chilli.
Reasoning: Heat, colour and aroma rarely all peak in one variety, so serious products blend. A hot sauce pairs a heat variety with a colour/aroma variety; a chilli oil pairs aromatic Erjingtiao with heat. The buyers who get consistent product are the ones who name the varieties and the window, not the ones who order "hot chilli".
